چکیده:

Dried and ground leaves of spearmint (Mentha Spicata L.(Labiatae)) were used as a matrix for supercritical extraction of essential oil with CO2. The objective of this study was to analyze the composition of the extracted essential oil from spearmint leaves grown in Shiraz-Iran with supercritical carbon dioxide at optimum operating pressure, temperature, particle size, carbon dioxide flow rate and dynamic time by GC-MS. Twenty-two constituents were identified, of which carvon (45.964 %), Pulegone (13.893 %) and Limonene (12.807 %) were the major components.
