چکیده:

The drying behavior of garlic cloves is experimentally investigated in a convective dryer and the mathematical modeling was performed by using drying models in literature. Drying experiments were conducted at inlet temperature of drying air of 40-70 °c and at drying air velocity of 1-2 m/s. Seven different mathematical drying models were compared to find the best fits of drying curves. Drying of garlic cloves occurred in the falling rate period. The effects of drying air temperature and air velocity on the model constants and coefficients were described by regression models.
